One of Ashtons Favourite FoodsI thought it would be a good idea to share my recipe for zucchini slice, it was one of the first finger foods Ashton was introduced to as a baby and he still loves it and eats it all the time. It can be so difficult to find appropriate foods for your baby to eat, that are safe, nutritious and something they will actually eat! This zucchini slice ticks all the boxes.
I actually started to make this slice when I was diagnosed with gestational diabetes in my second pregnancy, as it is low in carbohydrates and high in protein it is quite a good snack for women with gestational diabetes. The version I made for myself was a bit different, with salt and bacon, but it became quite obvious that Ashton, who was about 6 months at the time absolutely loved it. Tips for Making a Great Zucchini Slice1: Use baking paper to line your slice tray, I have ruined many slice trays due to inadequate lining. I find this slice sticks quite a lot even if the tray is heavily greased. I usually spray my tray with oil then line with baking paper.
2: For babies grate the zucchini very finely, I use a food processor with the finest grating disc. I find this is quick and works well.
3: I like to cut the zucchini slice into thin pieces once it has cooled down, I find this is easy to feed to baby
4: Use a really good heavy duty whisk to combine the ingredients, it will be the only utensil you really need!
Zucchini Slice Ingredients3 cups of grated zucchini
1 cup cheese grated
½ cup self raising flour
½ cup milk
MethodLine a standard slice tray with baking paper
Combine eggs, self raising flour and milk in a large bowl and whisk until smooth and combined well
Add in vegetables and cheese and use whisk to combine
Pour mixture into tray and spread over tray evenly
Cook for 35 mins in an oven, fan forced, at 180 degrees celsius Zucchini Slice straight out of the oven.
ModificationsGluten Free: To make gluten free I have substituted the flour for almond meal, this works well but the texture is slightly different.
Salt: For older children you could add a teaspoon of salt and top with small pieces of bacon, this makes it a bit more tasty.
Substitution: You can really use any vegetables eg. carrot, capsicum or a mix and make it more of a vegetable slice.
Overall I find this zucchini slice recipe a really good base that you can do a lot with and honestly Ashton never gets sick of eating it. It is also great as side dish for the entire family or a lunchbox snack.
